There is always acertain amount of excitement when finding a good recipe.  My excitement was at the Fresh Prince of Bel-AirCarlton dancing level when I found this recipe.  I’m making thesestuffed peppers this weekend!  Best believe.



Philly Cheesesteak Stuffed Peppers
Ingredients8 oz. Thinly Sliced Roast Beef8 Slices Provolone Cheese2 Large Green Bell Peppers1 Medium Sweet Onion6 oz. Baby Bella Mushrooms2 Tbs. Butter2 Tbs. Olive Oil1 Tbs. Garlic - MincedSalt and Pepper - to taste
PreparationSlice peppers in half lengthwise, remove ribs andseeds.
Slice onions and mushrooms. Saute over medium heatwith butter, olive oil, minced garlic and a little salt and pepper. Saute untilonions and mushroom are nice and caramelized. About 25-30 minutes.
Preheat oven to 400*
Slice roast beef into thin strips and add to theonion/mushroom mixture. Allow to cook 5-10 minutes
Line the inside of each pepper with a slice ofprovolone cheese.
Fill each pepper with meat mixture until they arenearly overflowing.
Top each pepper with another slice of provolonecheese.
Bake for 15-20 minutes until the cheese on top is goldenbrown.
Serveand Enjoy!!
